Hi everyone, i want to share with you my best recipe which i learnt from my mother who is an amazing baker and cake decorator. from this recipe you can add any ingredients you like such as dried fruits, only almonds, lemon zest/juice and more (
comment if you want me to help you on making any type of cake flavors). So the recipe has its own secret :D which you have to stick with it and make sure to make no changes if you want a successful perfect fluffy light cake..

what you will need:
The secret is that all the main ingredient has to weight the same. the batter which i made was for 2 cakes, you can half the ingredients if you would like to make only 1.
Main ingredients: 500g of eggs
500g of flour
500g of white sugar
500g of butter
2 Table spoon of vanilla essence and any kind of yogurt ( so the cake does not come out dry)
Preheat oven to 180*c before starting to make the batter and butter your pan. i place paper at the bottom of the pan and butter it so when i turn the cake over (when its all done and cooled) it comes out perfect and sleek.
Procedure : put in all ingredients all at once

Butter + Flour + sugar + eggs + vanilla essence + yogurt.
Now Careful !!! Mix at slow paste first so that the flour does not rise in your face : D . you can speed up the machine once the batter seams incorporated (add choc chips) and let mix for only 2mins,
Do Not over mix as you want your batter to have air so that it comes out fluffy.
Pour the batter into your pan and add almond flakes and dried grapes for amazing flavors. Place your pans in your oven at 180*c and let cook for exactly 1hr. Make sure that you never open the oven before the 1hr. you can check how the cake is doing through the little window but do not open as it will deflate and the cake will not rise again once it has gone down .
After the 1hr your cake should look like mine : )
See how fluffy and moist it looks, its just the perfect homemade cake ever !!!
If you want a moist cake abit like a genoise texture, pour half a cup of water in a glass + 2 Table spoon of sugar mix well and with a brush spread the juice evenly on the cake but make sure not to over soak it.
You can also spread a chocolate ganache on your cake: melt 250g of chocolate + 2 Table spoon of milk or whipped cream in the microwave for 3 mins but mixing it after each 30sec intervals. Spread it on the cake with the help of a spatula and VOILLLAAA GUYS!!
